At an elevation of 4,000 ft, with a cool climate, the terroir benefits from an abundant sun, therefore creating a sharp contrast between day and night temperatures. The 321 acres of vineyards are planted on well-draining rocky and sandy soils. The fruit is estate grown and hand-picked. White grapes are cooled and gently crushed. Sometimes some skin maceration is performed for a short period. Red grapes are crushed and placed by gravity in stainless steel tanks where they are cooled for a pre-maceration.
