Handpicked traditional Portuguese grape varieties (red for Ruby and Tawny; white for White Port) are harvested in the fall and fermented for a short period of time before the addition of 100% neutral grape spirits alcohol. This step stops fermentation and preserves the wine?s natural grape sugars. Dow?s Ruby, Tawny and White Ports are aged in oak casks for an average of three years and then bottled ready to drink.
